Commercially prepared dips and spreads are available in every supermarket. But, the authentic Middle Eastern taste, as well as freshness, which you will experience when you prepare you own dips and spreads will convince you that the little bit of time invested is well worthwhile

Yesterday evening I had some free time, so I decided to prepare one of the most special, tasty Middle Eastern recipes I know- Pita Bread.

Well It took me a while, it’s not the easiest recipe to prepare, but the effort was defiantly worth it. After the first Pita Bread came out of the oven me and my girlfriend tore it apart, so it was gone after 10 seconds. Then when the second came out, we added some top quality butter, and this time we took thing more slowly so we can really enjoy the freshness and awesome taste of the Pita Bread. I prepared 8 Pita Breads, and none were left after no more than 1 hour.

Next time I’ll try to be less greedy, and maybe prepare more pitas (12-15)

I just had a great dinner with a great recipe I learned from my Grandmother, “squash with tomato sauce“
I don’t like all of grandma’s cooking, sometimes she prepared over oily food, but this is one of my favorites.

Ingredients:

7 medium size squashes, sliced- 1/2 inch sclices
2 big onions, chopped
1/2 cup Tbsp tomato paste
1/2 cup water
2 Tbsp olive oil
1 Tsp sea-salt
1/2 Tsp black-pepper ground
1 Tbsp high quality honey
2 cloves garlic, crushed

Directions:

1. Fry the onions together with olive oil and sea-salt.

2. Add the squashes and cook on medium fire for 10 minutes.

3. Add the tomato paste and water (1 to 1), and continue to cook for 20 minutes.

4. Add honey, black-pepper, cook for 5 minutes, then add the garlic and close the fire.

5. Wait 5 minutes, and your tasty squash recipe is ready.

Really good with rice and fish

Bon appetit!!

When I was a kid I didn’t like hot, spicy foods. I remember one time when I was 16, when I went with my family to an oriental Iraqi restaurant. It wasn’t the first time I went to this kind of restaurant, the food was good and we were having a great time. Then at some point I tried to eat green raw hot pepper, wow that was terrible, I felt like I was burning, and nothing I tried could ease it. So after that I thought “No more with this hot stuff”. But things did change. I don’t remember when exactly , guess somewhere in my early 20′s I started to eat some foods with hot spices, first very little, and then gradually more and more. There was one kind of food that I really started to love Hot Pepper Dip, which is coming from Yemenite. I found out that is goes well with many kinds of food like: bread, hummus, potatoes, some soups, meat and more. My love to hot, spicy foods is no question today, it’s almost an addiction. Yesterday I prepared my preferred recipe for hot pepper dip, and it surely contributed to my great Saturday.
